This is one of those recipes and is great for school nights and a good way to use up leftover chicken. The recipe comes from the <em>Super Quick Tortilla Soup<\/em> recipe that appeared in a Trader Joe&#8217;s flyer several months ago. Here I give measurements and further ideas.<\/p>\n<p style=\"padding-left: 30px;\">4 cups low sodium chicken broth (1 aseptic container)<br \/>\n2 cups or 1 can diced tomato<br \/>\n2 cups or 1 can corn<br \/>\n2 cups or 1 can black beans<br \/>\n1-2 cups chopped cooked chicken (or 1 can of chicken)<br \/>\n12 oz jar salsa<br \/>\nTortilla chips<\/p>\n<p style=\"padding-left: 30px;\">Bring broth to a boil. Add in next 5 ingredients (tomato through salsa). Reduce heat to medium and cook until heated through. Serve hot topped with tortilla chips.<\/p>\n<p>You could also add a bit of rice or cilantro for additional flavor and perhaps serve with a dollop of sour cream.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I love quick and easy recipes that are tasty and relatively nutritious.
